1 chicken fryer cut into small pieces
6 tablespoons of olive oil
1/4 cup of  Italian parsley
3 large cloves of garlic finely chopped
3 sprigs of fresh rosemary  pull off rosemary from vine and chop
1/2 cup white wine
1/2 cup of water
Salt and Pepper

Brown cut up chicken in olive oil in dutch oven or medium pot
brown well on both sides salting well.
Add chopped garlic  parsley and rosemary mix into chicken well
Lower heat and add water and wine
cover and simmer 45 minutes  if neccesary  add more water

Serve in bowls
Mom would serve this with a round loaf of sheepherders bread that
we passed around and pulled off a piece and dipped it in the juice.


1 lb of mini shells
1 box of  frozen baby peas (Mom would make this with fresh peas)
1/2 cup of butter
1/2 cup of parmesan cheese

Cook shells per directions on the box
Cook peas until just tender do not over cook
Mix together with melted butter
sprinkle with parmesan cheese.

Once you make this it will be a staple in your weekly recipes
This can also be a side dish for fish or steak.
